    FOUNDER | CULINARY DIRECTOR

    Chef Oscar was born in Los Angeles, California, with Mexican heritage. At a young age, he relocated to Mexico where he developed a deep appreciation for traditional cooking styles through observing his grandmother's preparation of Mexican dishes with rich flavors. This experience, combined with growing up surrounded by family and shared meals, led Oscar to pursue a career in the culinary arts.

    After studying in Mexico City and working at several prestigious establishments in the capital, Oscar joined the culinary team at The Club de Banqueros, a renowned dining institution known for its high-quality products and exceptional culinary talent. It was there that he established a reputation for himself as a standout chef.

    Oscar's passion for new culinary experiences took him to New York, where he worked with renowned chefs and continued to build his career. He caught the attention of Celebrity Chef Richard Sandoval, who was impressed by Oscar's bold flavors and friendly personality. With Chef Sandoval, Oscar embarked on a journey that led him to open numerous restaurants and train culinary teams around the world, from Costa Rica to Dubai, and from Doha to Chicago. Throughout his travels, Oscar has imparted his passion for good food and bold flavors to the next generation of chefs.

    Chef Oscar Padilla was recently named the winner of the popular Food Network show "Chopped" and he is thrilled to be part of such a renowned program and to have the opportunity to showcase his culinary skills on national television.

    In his personal life, Oscar is a devoted husband and father of two children, who enjoys spending time with his family and exploring unique dining destinations. Chef Oscar adheres to a humble kitchen philosophy, “Practice humility and to never be shy with the salt”

    CO- FOUNDER | FINANCE DIRECTOR

    Norma is a woman who has built her path through commitment and excellence. As a wife and mother of two, she has masterfully balanced her family life with an outstanding professional career in accounting and business administration.

    Graduating in Mexico City, Norma worked in prestigious accounting firms where her ability to solve complex problems efficiently and effectively earned her a reputation as a highly respected professional. She has always stood out for her determination and her knack for maintaining quality in every endeavor.

    When she moved to the United States, she expanded her expertise into international business, taking on leadership roles in department stores and specializing in customer service and sales. Her professional approach has not only propelled her own career but has also solidified her reputation as a reliable and visionary leader.

    Currently, as the Director of Finance at Balam Culinary Collective, Norma has been the fundamental pillar in the opening and successful operation of concepts like Gaucho Parrilla and Chulo Taco at Freedom Street Social Food Hall. Over the past four years, she has led with determination and has been the driving force that supports the entire team. Her vision and her ability to blend attention to detail with strategic thinking have turned the company into a true success story.

  • Joe Manzanares

    BUSINESS DEVELOPMENT DIRECTOR

    Joe is an experienced business development leader with a 35-year track record in real estate, commercial development, and hospitality project execution. As the Business Development Director for Balam Culinary Collective LLC, Joe leads the strategic expansion of chef-driven restaurant concepts, including the new BuffHous sports eatery in Boulder.

    Joe’s career began in architectural design and planning, giving him a foundation in construction, site layout, and building functionality. He transitioned into real estate in 1994 and became one of Denver’s top-producing brokers, later purchasing and operating a Coldwell Banker franchise and founding Infinity Mortgage Company, which he grew to 58 employees. This background allows Joe to analyze locations, structure deals, and manage complex financials with an investor-minded approach.

    In the restaurant sector, Joe specializes in securing profitable sites, negotiating favorable lease terms, managing build-out budgets, and coordinating directly with cities, landlords, contractors, and licensing entities. Working alongside internationally recognized chef and Food Network “Chopped” champion Oscar Padilla, Joe oversees the business, operational, and financial components of each project from concept through opening.

    Joe’s combined experience in real estate, finance, and development provides investors with confidence that each project is grounded in strong fundamentals, disciplined planning, and transparent financial oversight. His leadership ensures that restaurant concepts are positioned for long-term viability, operational efficiency, and consistent investor returns.
